What is Gluten?

- Gluten is a Protein that is present in grains such as Wheat, Barley, and derivates of these grains like malt and brewer`s yeast. You may recognize it better as the reason why dough has its elasticity, ability to rise & keep its shape, and provides the final product with a chewy texture.

Celiac Disease

Celiac disease is an autoimmune digestive disorder, caused by Gluten, that affects the small intestine with susceptible genetics. Gluten fragments, leading to inflammation of the intestine and shortening of the intestinal villi, as seen in the image below from UCLA Health. When the villi are damaged & shortened, there is a reduced ability of a small intestine to properly absorb nutrients from food. Symptoms of Celiac Disease include abdominal bloating, Diarrhea, constipation, fatigue, infertility, iron deficiency, anemia, osteoporosis, weight loss, and malnutrition.The disease affects 1 in 133 people in the World and the vast majority, around 95 % of patients are undiagnosed.

Non-Celiac Gluten Sensitivity

-Correlated to the consumption of wheat and other gluten-containing foods. There is actually no measurable indicator for diagnosing this consensus as to whether NCGS exists or not.
It is also unclear whether those who report improvement of symptoms under a gluten-free diet are in fact sensitive to the substance to other substance in wheat. For example, it has been found that some self-reported NCGS patients symptoms improved on a low FODMAPs diet.
The perception of these symptoms also plays a role due to the popularity of the "fad" diet. In other words, people read and hear about the "dangers" of Gluten and Start to believe they have these symptoms and sensitivities.
